Clove is a spice plant that has played an important role for hundreds of years as a food and medicinal ingredient. Indonesia as a spice-producing country has a huge opportunity to become a provider of spices in international trade, especially the European Union market. Indonesia's clove export position ranks third after Singapore and Madagasar. In Indonesia, clove plants are widely cultivated in the provinces of North Sulawesi, Maluku and other areas that comply with the requirements for growing clove plants. Clove is a plant native to Indonesia which is widely used as a cooking spice and the main ingredient for clove cigarettes. Clove plants are a type of herbaceous plant that has large tree trunks and is hard woody and can survive for decades. The height of the plant can reach 20-30 meters, the branches are quite dense, the crown or crown of the clove tree is conical, the leaves are green in the shape of an elongated oval with an angled tip and base with a width ranging from 2-3 cm and long leaves without stalks ranging from 7.5 – 12.5 cm. Clove flowers and fruit appear at the end of the leaf branch with short stems and bunches. Young clove flowers are purplish in color, then turn greenish yellow and turn pink again when they are old. Dried clove flowers will be blackish brown in color, with a fragrant smell and a spicy taste. Clove plants first bear fruit at the age of 4-7 years.
